Kitchen on the Edge of the World is the restaurant from Holmen hotel in Lofoten. The whole experience is focused on what they call "coastal foraging", meaning the menu changes constantly based on whatever the raw Arctic nature provides that exact week. One day you’re eating incredibly fresh fish caught right out of the water in front of you, and the next it’s local lamb or wild herbs picked from the nearby hills. Because it’s a premium, high-end destination, the dinner is definitely an investment (like most great meals in Norway).
